Every wedding timeline template on the internet was written for a country where the sun sets at 6pm and dinner starts at 6:30. Portugal is not that country. In June, July and August the sun goes down between 8:45 and 9:10pm, the heat peaks at 4pm, and nobody here considers 7pm a late dinner. Copy a US timeline onto a Portugal wedding and you get a ceremony in the hottest hour of the day and a dinner finished in broad daylight.
This is the run sheet we actually work from as caterers at quinta and villa weddings across Portugal. Adjust the anchors to your date's sunset and everything else falls into place.
The three Portugal rules
- Never schedule an outdoor summer ceremony before 5pm. In August, 2pm ceremony photos are squinting guests and melting makeup. 5:30pm is the sweet spot: the light is turning gold and the heat is breaking.
- Let dinner meet the sunset. A 8pm seated dinner puts golden hour in the middle of the meal and the first dance just after dark. That is the photo set you actually want.
- Portuguese parties run late, plan for it. The party ending at midnight reads as an early night here. Confirm venue curfew, band hours and staff overtime to 2am in writing before the day.

Two details most couples miss: the cocktail hour is really 90 minutes (photos always run long), and the late-night snack at 00:30 is the cheapest guest-happiness money in the whole budget.
What the catering team needs from your timeline
- Access time in writing. A field kitchen at a venue without one takes 3 to 4 hours to build before the first canapé. Noon access for an evening wedding is the minimum, not a luxury.
- A speech plan. Speeches between courses are lovely and they stop service; we plan around 10 minutes per slot. Tell your caterer how many and when, and the kitchen paces the fire to match.
- One decision-maker on the day. The kitchen asks exactly one person about timing changes. Couples do not answer logistics questions in wedding clothes.
