How to choose
Start with the group. For two to six people, a named independent chef or a marketplace chef usually makes the most sense. From eight to twenty, the question becomes service: one chef cooking and serving is a different evening from a kitchen team plus waiting staff, and it shows from the second course onwards. Ask every shortlisted operator three things: the price per guest in writing, who serves the food while the chef cooks, and what happens if your kitchen is small.
